Hi question about value, when you miss out on the value bet and the odds change, does that mean the opposite side becomes the value.

Not necessarily, often neither side has value, this is actually the line the books want. Even if there is still technically some value i dont think it is worth the effort to be betting things with .1 to .5% of value normally.
